This Prosecco rosé has a lovely pink colour with violet reflections, and a fresh delicate bouquet with a hint of small red fruits. For a sparkling wine with quite low alcohol, it has excellent structure and pleasant complexity with a high but balanced acidity. Great as an aperitif and with hors d’oeuvres, it also goes extremely well with rich dessert.

This cheerful pink Prosecco is made from grapes grown in vineyards around the village of Piave, in the province of Treviso, Northern Italy. The three different grape varieties – Merlot, Cabernet Sauvignon and Pinot Nero – were harvested before they were fully ripened to retain the freshness of fruit characters and acidity.

As for the name, Castello is a district in the historic centre of Venice and 4375 is the street number of wine store founded by Francesco Fabiano in 1912 – the start of the Fabiano wine business, which is still family-owned today. Alessandro Fabiano, the fourth generation, is now at the helm.
